Cassia Apples have become a favorite snack around our house because they are simple, crisp, and surprisingly flavorful. The combination of fresh apple, warm Cassia, and bright Lemon creates a cinnamon-citrus character that can make an ordinary sliced apple feel like a special treat. They are easy to prepare at home and convenient to pack for a picnic, road trip, or afternoon snack.
Cassia essential oil comes from Cinnamomum cassia, an evergreen tree native to southern China and surrounding areas. Its familiar warm aroma comes largely from cinnamaldehyde, one of the principal aromatic compounds found in Cassia oil. Because Cassia essential oil is highly concentrated, a very small amount can provide a pronounced flavor.
Lemon provides the brighter side of the combination. Its fresh citrus character contrasts nicely with Cassia’s heavier spice and complements the natural sweetness of the apples.
For this recipe, I add the Cassia and Lemon essential oils to the water first, stir, and then add the sliced apples. I gently move the apples through the flavored water for one to two minutes before draining them. Use only essential oils specifically labeled for culinary or internal use and follow the manufacturer’s directions.
